Does the agent only speak the language I choose?
The language you choose is what will determine what language the agent would understand, and what language to speak.
For southern US states, we created the ๐บ๐ธ English + ๐ช๐ธ Spanish language, so that agents can understand and speak both languages, even switching mid-conversation.

Change the language of your agent by going to your agent and clicking on a language.
โDoes every voice go with every language?
Yes, you can pair any voice with any language. Some voices will sound better with certain languages, so I recommend experimenting different voice-language combinations.
Do I need to write the instructions in the agent's languages?
I recommend writing the instructions in the language the agent is set to. If you don't speak that language, I'd simply write them in english and translate it.
Alternatively, you could write it in English but be sure to add โalways respond in Spanishโ to the instructions.
